Roasted Rabbit Recipe


If you raise meat rabbits like I do you might want to try this simple roasted rabbit recipe. This is my favorite way to prepare my rabbit, simple and delicious. Just a side note, it goes pretty well with some mashed potatoes and gravy on the side as well as some pan fried asparagus in butter. Is anyone else getting hungry reading this. 😉

Ingredients
  1. 1 rabbit
  2. salt
  3. pepper
  4. 4 tablespoons olive oil
  5. 2 garlic cloves, finely diced
  6. 2 teaspoons finely diced fresh rosemary
  7. 1 teaspoon black peppercorns, crushed
  8. 1 teaspoon paprika
Instructions
  1. Spread rabbit out as flat as possible and place it on prepared pan.
  2. Season both sides with salt and pepper.
  3. Combine oil, garlic, rosemary, peppercorns and paprika in a small bowl.
  4. Rub mixture over both sides of rabbit.
  5. Cover and refrigerate 2-3 hours.
  6. Preheat oven to 475°F.
  7. Uncover rabbit.
  8. Roast until tender and cooked through, 30-35 minutes.
